Stuffed Skirt Steak






1. Gather all your ingredients 





2. Peel & rinse potatoes. Chop in cubes to boil easily.





3. Rinse off meat and season with the following: Basil, salt, &  pepper.
I double layered the steak because it was so thin.








4. Sautee spinach to your preferences. I like to use salt, pepper, and garlic puree.






5. Chop up peppers or get frozen mixed peppers (like I did) and sauté. I added crushed red peppers and seasoned in same pan as spinach to keep flavor savoring.






6. Add spinach, but not to much we want it to roll up easily.






7. Spread shredded parmesan cheese over spinach.





8. Roll up meat in a pinwheel. Use a toothpick to hold together or place down on a baking sheet to keep from unrolling. Broil for 10 min.








9. Drain water from potatoes. Add butter, salt, pepper, & a little bit of milk. Usually I add cheese but with all the other savory flavors going on its not needed.






10. Plate and enjoy

Fall Faves On A Lazy Day



Fall is the perfect time of the year for layering and pretty much wearing whatever you want. Thats exactly why I love this season because I can wear a dress one day and a nice jacket the next. Even though I love dressing for this season, there are times I really just don't want to even bother, like today. I wasn't up for dressing and thats when I remembered I can take a basic dress and some of my favorite items and throw something together and that's exactly what I did.


Every season there are 3 things I can't seem to stop wearing in the Fall and the repetition has begun.

1.) Infinity scarfs
2.) Knee High & Other Comfy Socks
3.) Dark MAC Lipstick

I love scarfs and being able to throw them on with any plain shirt, sweater, or dress to make it a little more chic is A ok in my book. 

Socks have always been my best friend but now being able to wear knee highs with my favorite pair of riding boots is always exciting for me. However, when I feel like I have worn them a little to much, I always revert back to my cozy ones my mother always stocks me with each year.

& Finally, MAC Lipstick- dark colors only. I'm not a big person who believes following colors with the seasons, but I guess when it comes to lipstick I am. I usually don't wear lipstick during the summer simply because my favorite colors like Rebel, Cyber, & Film Noir are a little uninviting until now!! I guess you could say I got my mojo back. The thrill of these colors complement my skin and give me a kick ass personality that I can't resist. I will be taking a trip to the MAC store soon to find more shades.

Oven Roasted Smoked Sausage & Potatoes


With my new job and the continuation of class, I have been trying my hardest to cook at home prior to work. Not only does it save money, but it also gives me the opportunity to try new foods without spending a ton at restaurants that I don't have time to visit. This is a very simple and savory meal. Hope you guys enjoy and be sure to let me know if you like it or did something different to give it your very own twist of flavor. 



Gather all ingredients to be sure you didn't forget anything
at Target or your local grocery store. 


Line a large baking pan with aluminum foil and drizzle with 
olive oil. Preheat oven to 350 degrees F.


Obtain a large mixing boil.


Take Smoked Sausage from package, rinse, and begin to slice
in even sized proportions because even cooking is essential. 


Peel, Rinse, & Chop Onion.



Place sausage and onion in your large mixing bowl.


Peel and rinse your potatoes using a paring knife (the smaller one-its
 saves more of the potato).


Chop potatoes evenly in size, but no particular cube shape
and place in mixing bowl. 


Fill bottle cap 4 times with olive oil and place in mixing bowl.


Season your bowl of ingredients with the spices listed 
above. *Remember its better to start small; you can always 
add more if necessary*


Considering that washing your hands is a continuous part of cooking
anyway, use your hands to mix the bowl of ingredients 
so that the olive oil and spices are evenly spread 
throughout the mixture. 


Spread your ingredients in your previously lined and oiled
 baking pan.


After about 45 minutes of baking this is the result you will get.


Add your parmesan cheese and place in oven long enough to melt.
Take out and enjoy!
